Going crazy for nuts!!\u00a0 Wow… peanuts, walnuts, pecans, almonds, pistachios…\u00a0 Grandma loved them all.\u00a0 But if you live in a small town like me, plan ahead for this recipe..\u00a0 Pistachios aren’t readily available shelled.\u00a0 It was a true labour of love to get me some Pistachios!\u00a0 But look at these adorable cookies as a result!<\/p>\n

I imagine this recipe was copied down because of it’s chocolate & nuts combination.\u00a0 It really is a great snack to bring to an event, or I imagine this was a Christmas cookie too.\u00a0 It’s not sweet, at all.\u00a0 The whole recipe has only a few TBSP of sugar, so it’s more like grabbing from the mixed nuts bowl.. But we really liked them!<\/p>\n

Use an older mug and a pot with 1″ of water as a double boiler! Works great!<\/figcaption><\/figure>\n

Grandma’s recipe suggests that you should roll the cookies (by TBSP amount) into 2″ logs; then cut lengthwise. (Like Cadbury Fingers) I did plenty this way, but for the rest I smushed the dough out, and cut with a knife long skinny rectangles to save myself some time.\u00a0 The taste and look were both great.<\/p>\n

Twin Nut Wonders<\/h3>\n
    \n
  • 1\/2 cup butter or margarine<\/li>\n
  • 3 tablespoons powdered sugar<\/li>\n
  • 1 cup sifted flour<\/li>\n
  • 1 cup ground almonds<\/li>\n
  • 1 square semisweet chocolate<\/li>\n
  • Finely chopped pistachio nuts<\/li>\n<\/ul>\n

    1. Cream butter, sugar, mix flour, almonds.\u00a0 <\/span>Chill 1 hour or until firm enough to handle.<\/li>\n
    2. Preheat oven to 325.<\/li>\n
    3. Form tablespoons of dough into 2 inch long fingers, cut in half lengthwise, placing cut side down on uncreased cookie sheet.<\/li>\n
    4. Bake until golden brown & remove from pan carefully. (Approximately 15 min)<\/li>\n
    5. Melt chocolate in a double boiler over hot water, remove and dip one end of cookie into melted chocolate.<\/li>\n
    6. Then dip into nuts.\u00a0 <\/span>Return to wire racks until chocolate has set. (Or use parchment paper)<\/li>\n
    7. Makes 3 dozen, easily.<\/li>\n<\/ol>\n<\/div>\n
