Tomato & Onion Salad

Tomatoes and our family are not friends… My awesome sister tried out this recipe for us!

I’ve been enjoying my sister’s blog posts about Grandma’s recipes and was excited that she asked me to participate.  While she has never like tomatoes, our family loves them!

Thankfully, it’s an easy recipe, and I had all 4 ingredients at home.  I went out and picked the equivalent of 7 medium sized beefsteak tomatoes.  We grow heirloom tomatoes of a variety of shapes and sizes.  We have also been growing basil in our garden this summer.  Onions are almost always in the cupboard, and Italian dressing in the fridge.

The flavour of the recipe was great!  The tomato basil combination never gets old.  It seemed like there was more dressing than the salad could support.  Grandpa grew tomatoes in their backyard, and I wonder if the tomatoes she used in her recipe were much larger than the ones I used.  I would definitely add more tomatoes, or cut down on the dressing.  The recipe doesn’t include this, but I would suggest letting the recipe sit for an hour or two before eating so that the onions mellow a little!

Tomato & Onion Salad

  • 7 medium sliced tomatoes
  • 2 medium sliced onions
  • 2/3 cups shredded fresh basil
  • 1 cup Italian dressing
  1. Slice tomatoes and put in serving bowl.
  2. Put basil over top.
  3. Pour, distributing evenly, the Italian Dressing. Mix.
  4. Let sit for an hour, or serve immediately if necessary.

Serves 10.

TIP:  Using large tomatoes will make a fuller, less runny salad.
