Rhubarb Crumble
This is a quick crowd pleaser! Perfect cold, warm, or with ice cream on the side! An easy go-to recipe similar to Apple Crisp but with a crumb base as well as a topping. Depending on the season – you could certainly mix this up with other fruits. Just lessen the sugar in the sauce!
This was a house favourite; it reminded my husband of his childhood and I even went to my mom’s house and we made a few of them! and polished them off quickly 🙂

Rhubarb Crumble
- 4 cups diced rhubarb
Crumble mixture:
- 1 cup all-purpose Flour
- 3/4 cup regular rolled oats (not instant)
- 1 cup packed brown sugar
- 1 teaspoon salt
- 1 teaspoon cinnamon (more if desired)
- 1/2 cup melted butter
Sauce:
- 1 cup Sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- Mix the crumble mixture together and firmly press 1/2 of the mixture into a buttered 9″ pan.
- Spread rhubarb over top.
- Mix sauce ingredients with 1 cup of water in a saucepan.
- Cook sauce on medium until thick and clear. Pour over rhubarb.
- Sprinkle remaining crumbs on top.
- Bake at 350F for 1 hour or until golden brown and bubbly.
TIP: When using this recipe for other fruits, lessen or eliminate the Sauce.
