Chicken Cacciatore
Wondering what to cook tonight? Nice and warm on a rainy day like today! This is simple, great with rice, and very tasty. Although Grandma uses 1 clove of garlic – I may have used 4, haha. Delicious!
I used quite a large saute pan (12″) and bought a family pack of chicken thighs. So keeping this in mind, you may need to half the recipe!

Chicken Cacciatore
- 2 1/2 pounds chicken parts
- 2 tablespoons shortening
- 1 can tomato soup
- 1 teaspoon lemon juice
- 1/2 cup chopped onions
- 2 large cloves of garlic (Grandma uses 1)
- 1 teaspoon fresh oregano
- 1/4 teaspoon salt
- 1/2 medium green pepper (cut in strips) (optional)
- In Skillet, brown chicken in shortening. Pour off fat.
- Add remaining ingredients except Green pepper.
- Cover – cook over low heat for 30 minutes.
- Add green pepper & cook 15 more minutes.
- Stir now & then.
