Crunchy Jumble Cookies
Have you ever baked cookies and come out with the same or more servings than the recipe said it would make?? Yea, me neither. Those people must be making puny little cookies! Anyways – Grandma said it made 3.5 dozen, and she’s right! This made 43 good sized cookies; leaving room for the occasional finger scoop of dough too!
The flavour is unique and great. Yum! If you aren’t a raisin fan, leave them out. Love the soft cookie feel but with the crunch of Rice Krispies! My dad (Grandma’s firstborn) says his Mom baked a lot with Rice Krispies… Figures it may have been a good affordable option; and kids love it 🙂
Here is her recipe card & a printable recipe!
Crunchy Jumble Cookies (Chocolate Chip)
- 1/2 cup soft margarine
- 1 cup sugar (beat until creamy)
- 1 egg
- 1 teaspoon vanilla
- 1 1/4 cup flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 cups Rice Krispies
- 1 cup chocolate chips
- 1 cup raisins
- Preheat oven to 350.
- Beat margarine & sugar until creamy.
- Add egg & vanilla; mix.
- Add Flour, baking soda, & salt. Mix.
- Finally, add Rice Krispies, chocolate chips and raisins. Stir.
- Drop by level tablespoons onto lightly greased cookie sheet.
- 350 for 12 – 15 minutes. Makes about 3.5 dozen.
TIP: They do not grow or flatten too much in the pan. So feel free to put them close together; and if you like perfectly round cookies – you may want to acquire one of those fancy cookie scoops.
