Banana Bread
The same night I made Cranberry Bread I whipped up a loaf of Banana Bread. My Dad says this was practically a staple in the Hood house. They both cook a long time, but this one a bit shorter; I was able to mix the ingredients and prep the loaf just as the Cranberry Bread had the right amount of time left in the oven!
A lot of Grandma’s recipes do not have instructions. I started out with wet ingredients; added dry ingredients & finally my “extras”. Also, I did a bit of googling to find an average cooking time :). I wonder why she left some of these details out? Did she have it memorized? Were ovens inconsistent (when the recipe was created)? Hmm

Banana Bread
- 1/2 cup margarine
- 3/4 cup sugar
- 2 eggs
- 1 1/2 cups mashed bananas (approx 2, maybe 3 small)
- 2 cups All-purpose Flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups All Bran cereal (or 2 1/2 cups Bran Flakes cereal)
- 1/2 cup nuts, coarsely chopped
Instructions
- Preheat oven to 350.
- Mix margarine, sugar & eggs together. Add mashed bananas.
- Add dry ingredients to wet mixing bowl; loosely mixing the dry ingredients together.
Then mix with wet ingredients. - Add All-Bran cereal & nuts. Mix.
- Scoop into a greased loaf pan and bake at 350 for 50 minutes – 1 hour.
