Chicken Cacciatore

chicken_mealWondering what to cook tonight?  Nice and warm on a rainy day like today! This is simple, great with rice, and very tasty.  Although Grandma uses 1 clove of garlic – I may have used 4, haha.  Delicious!

chicken_prepI used quite a large saute pan (12″) and bought a family pack of chicken thighs.  So keeping this in mind, you may need to half the recipe!

Chicken Cacciatore

  • 2 1/2 pounds chicken parts
  • 2 tablespoons shortening
  • 1 can tomato soup
  • 1 teaspoon lemon juice
  • 1/2 cup chopped onions
  • 2 large cloves of garlic (Grandma uses 1)
  • 1 teaspoon fresh oregano
  • 1/4 teaspoon salt
  • 1/2 medium green pepper (cut in strips) (optional)
  1. In Skillet, brown chicken in shortening.  Pour off fat.
  2. Add remaining ingredients except Green pepper.
  3. Cover – cook over low heat for 30 minutes.
  4. Add green pepper & cook 15 more minutes.
  5. Stir now & then.
